The Farmers:
Campesinos Ecologicos de la Sierra Madre de Chiapas (CESMACH) is a Cooperative organization of farmers that live and operate in the highlands of the Sierra Madre de Chiapas in the buffer zone of the El Triunfo Biopshere Reserve.
Bridgeport Coffee has been buying coffee from the group for 15 years, our oldest relationship. The commitment to quality is obvious every year, even during the devastating Roya (leaf rust) outbreak of 2016. This years harvest is no exception.
The Coffee:
Mild in the cup with notes of dark chocolate make it a perfect choice for drip or cold brew. Grind it a bit finer and use slightly more coffee in every application without the worry of over extraction.
