Raised beds are the traditional way of drying coffee in Africa, hence the name African Beds. Because air is able to flow on both top and bottom, there is a more consistent drying of coffee with its outer shell (parchment) intact. These beds are for alternate processing of Santa Josefita and Santa Elena, which our roastmaster Mike Pilkington will visit next week.
