This family owned farm about 1400 MASL in the world renowned region of Terrazu. The seven siblings were the first to split from the ways of the past when they left the traditional method of growing, harvesting, then delivering the ripe coffee fruit to a large managed COOP for the de-pulping and drying. In 1997, the seven siblings combined their land and resources and purchased their own micro-mill. They were the first to do so, became leaders in the movement. The Penagos micro-mill changed everything. No longer was so much water required to soak and clean the fruit. The small footprint mill could be placed almost anywhere and required a fraction of the water of the traditional methods. Additionally, it shrunk supply lines in often hard to navigate mountainous roads and provided a new level of control. The modern day micro-mill has transformed specialty coffee during a time todays coffee farmer is dealing with warmer temperatures that are stressing beyond viability the varieties of coffee that have been grown in Central America for hundreds of years. Today, by incorporating new varieties that can withstand the changing environment along with creative processing methods aided by modern micro-mills, families like the Sanchez’s of La Candelilla continue to produce amazing coffees we are proud to offer at Bridgeport Coffee.
