Santa Elena – Yellow Honey Prep

This year Fernando Lima did some special processing for us of the coffee from his organic farm, Santa Elena. The process is called Yellow Honey.

Brief description: instead of removing all the fruit from the coffee seed (what everyone calls the bean) before drying, a little is intentionally left remaining. The seeds are then put on raised beds in a greenhouse to slow down the drying process, with the goal of a richer and deeper flavor profile after they are roasted here in Bridgeport.

We are still working on the final roast profile, but we are already finding that the Yellow Honey prep Santa Elena coffee is richer, with a bigger body and notes of a deep dark chocolate.
